Cherry Fudge Cake

Ingredients:
- 1 box fudge cake mix
- 21 oz can of cherry pie filling
- ¼ cup vegetable oil
- 1 teaspoon almond extract
- 3 eggs, beaten
Directions:
Preheat oven to 350 degrees. Grease a 9×13 cake pan. In a large bowl, mix together cake mix, pie filling, oil, almond extract, and eggs. Mixing by hand until well blended (do not overmix). Pour into cake pan and bake for 30 minutes or until toothpick in the center comes out clean. Let cool.
Fudge Frosting
Ingredients:
- 1 cup sugar
- 4 Tablespoons butter
- 1/3 cup milk
- 6 oz (~1 cup) semi-sweet chocolate chips
Directions:
In a saucepan, combine sugar butter, and milk. Boil, stirring constantly for 1 minute. Remove from the head and stir in chocolate chips until smooth. Pour over cooled cake. Frosting will harden as it cools.
Serve with vanilla ice cream. The cake tastes even better the next day!
