Elegant Toffee (English Toffee Candy)

This makes about one pound of toffee
Ingredients:
- 1 cup butter
- 1 cup granulated sugar
- 1 tsp. vanilla extract
- ¼ tsp salt
- 1 cup (or so) semi-sweet chocolate chips
- 1 cup(or so) milk chocolate chips
- 1 cup (or a little more) whole raw almonds
Directions:
Toast almonds in a 350 oven until toasted. (They will smell done and some will crack or split – usually about 10-15 minutes.) Let cool. Lightly chop and spread on a foil-lined baking sheet (about 7 x 11). Extra almonds should be finely chopped and set aside.
In a heavy saucepan (over medium heat) melt butter, add sugar, salt, and vanilla. Using a wooden spoon, begin stirring the mixture. Stir constantly until the mixture is the color of a raw whole almond (just before scorching).
Take off the heat and immediately pour over the almonds. Let cool.
Melt chocolate chips in a double boiler or the microwave on low power. (in the microwave it should take 4-5 minutes). Spread melted chocolate over the candy. Sprinkle with the finely chopped almonds. Let cool, harden, then flip over, and repeat on the other side.
